Wild buckwheat is not the grain in your pantry. Field marks for hikes, and which species a small dry garden in the West can start with.

Wild buckwheat is a shrub or mat-forming perennial in the genus Eriogonum, native to western North America, and it is not the same plant as the buckwheat grain people eat, which is an unrelated annual from Asia, Fagopyrum esculentum. On a hike you identify it by the tiny six-lobed flowers held in a cup-like involucre, by leaves that are usually woolly or gray beneath, and by a habit that stays low and woody rather than rising on a single stalk. A small dry garden in the West can start with one or two species only, and the safest first choices are the ones already growing within a few miles of the site.

The name causes most of the confusion. The grain sold as buckwheat, ground into flour for soba or pancakes, belongs to Fagopyrum, a genus in the Polygonaceae family that reached North America as a crop. The wild buckwheats are also Polygonaceae, but they sit in Eriogonum, a genus of roughly 250 species confined to North America, with the greatest concentration in California and the Great Basin. The two are relatives at the family level and nothing more. The grain is an annual grown from seed each year; a wild buckwheat is usually a long-lived subshrub, sometimes a cushion plant, sometimes an annual, and it is not harvested for flour. A field journal devoted to the genus, The Umbel Journal, covers the plants, their cultivation and the insects that visit them, and it states plainly that it belongs to no nursery and to no society.
What is a wild buckwheat, and how does it differ from the buckwheat grain we eat?
A wild buckwheat is a plant of the genus Eriogonum: woody at the base, often gray or silvery, flowering in summer and autumn when most of the surrounding hillside has finished. The grain buckwheat is Fagopyrum esculentum, an annual crop with soft green stems, broad leaves and white or pink flowers, planted in spring and harvested in weeks. The practical differences are these:
- Lifespan. Eriogonum species are mostly perennials, many of them subshrubs that keep a woody crown through winter. Fagopyrum is an annual and dies at frost.
- Origin. Eriogonum is native to North America, from the Pacific coast to the Great Plains and into Mexico. Fagopyrum is native to Asia and is cultivated worldwide.
- Use. Wild buckwheat is grown for habitat, for dry gardens and for erosion cover. Grain buckwheat is grown for seed, used as flour, groats or cover crop.
- Flower. Wild buckwheat flowers are minute, six-lobed, and packed into heads or sprays; grain buckwheat flowers are showy and visited by generalist pollinators.
A hiker who learns one thing should learn the involucre, because it is the structure that separates Eriogonum from everything that resembles it.
How do you identify a wild buckwheat on a hike, using flowers, leaves and the involucre?
The involucre is the diagnostic character. In Eriogonum, each flower stalk carries a small cup, tube or bell, usually with six or fewer teeth, and the flowers emerge from inside that cup. The involucre may be single at the tip of a branch or arranged in a ring, and its shape, its number of teeth and whether it is hairy or smooth are the features botanists use to separate sections of the genus. Once you have found one, the rest of the plant becomes readable.Flowers. Look for six tiny lobes, often white, cream, yellow or pink, sometimes turning rust or red as they age. They are gathered in dense heads, flat-topped sprays or rounded balls, and they hold nectar late in the season when little else is in bloom. A plant covered in bees in August on a dry slope is very often an Eriogonum.Leaves. Most species carry leaves in a basal rosette or clustered at the base of the stems. The upper surface may be green and smooth, but the underside is frequently covered in dense white or gray hairs, a felt that reflects heat and limits water loss. Leaf shape runs from round to long and narrow, and the margin is always smooth, never toothed. A leaf that is woolly beneath and smooth-edged, on a plant with woody stems, is a strong candidate.Habit and place. Wild buckwheats dominate open, dry ground: sagebrush flats, chaparral edges, pumice soils, desert washes, coastal bluffs. They rarely grow in shade or in wet ground. Sulfur buckwheat (Eriogonum umbellatum) forms low mats with yellow flower heads across much of the interior West. California buckwheat (Eriogonum fasciculatum) is a shrub of the chaparral and coastal scrub, with whorled narrow leaves and pinkish-white heads. Saint Catherine's lace (Eriogonum giganteum) is the tall island endemic of the California coast, with flat white sprays on a woody frame.A hand lens helps. The involucre teeth, the hair on the flower stalk and the arrangement of the heads are all small, and a photograph taken from directly above the flower head will usually settle the identification later.
Which buckwheat should a small dry garden start with?
Start with what grows near you. A species already present within a few miles of the garden is adapted to the local rainfall, soil and winter cold, and it will not need irrigation once established. For a small garden in the interior West, sulfur buckwheat is the usual first choice: it is compact, variable, long-flowering and widely available from native seed sources. For coastal California, California buckwheat is the equivalent, a shrub that tolerates lean soil, full sun and no summer water, and that holds its dried flower heads into winter.Three practical rules apply to any first planting:
- Plant in autumn. Roots establish through the wet months, before the first dry summer.
- Keep the crown clear. Gravel or coarse mulch around the base prevents rot in wet winters.
- Do not enrich the soil. Wild buckwheats grow on poor ground; compost and fertilizer push leaf growth at the expense of flowers and shorten the plant's life.
A garden of two or three species, spaced so each shows its own habit, will tell you more in one season than a mixed planting of a dozen.
What does a wild buckwheat do for the living world around it?
Wild buckwheat nectar and pollen support a wide range of insects and birds in late summer, when the surrounding vegetation has dried. Bees, including native solitary species, small butterflies and hummingbirds visit the flower heads. The plant also serves as a larval host for several butterflies, among them the Mormon metalmark and the dotted blue, which depend on Eriogonum species in the western states. Because the flowering period extends into autumn, a single established shrub can carry the nectar supply of a small garden through the hardest weeks of the year.
How does the genus reach a gardener who wants to go further?
The genus was mapped in detail by the botanist James L. Reveal, whose treatments of Eriogonum remain the standard reference for species limits and sections. Regional floras, herbaria and native plant societies publish keys and photographs that a gardener can use to check a name. What should a reader take away?
Wild buckwheat is a North American genus of dryland perennials and shrubs, not the Asian annual that becomes flour.
